Peanut Butter Granola

Ingredients

Dry Ingredients

  • 6 cup oats
  • 1 1/2 cup sunflower seeds
  • 1 1/2 cup pumpkin seeds
  • 2 tbsp cinnamon
  • 1 tbsp ground ginger
  • 1 1/2 tsp salt

Wet Ingredients

  • 200 g peanut butter
  • 520 g brown rice syrup
  • 2 tbsp vanilla extract

Instructions

  1. preheat oven to 350ºF
  2. mix dry ingredients together in a bowl
  3. mix wet ingredients together in a separate bowl
  4. pur wet ingredients over dry ingredients and mix together until all dry ingredients are coated
  5. spread the granola in a thin even layer onto baking trays lined with parchment and bake for 10 minutes
  6. remove from oven and stir, then bake for an additional 5-7 minutes or until oats and seeds are golden brown (be careful not to burn!)
  7. once done baking, stir in raisins and allow to cool for 10-15 minutes before storing
  8. serve with oat milk, sliced apple, pumpkin seeds, peanut butter, or your favorite toppings!
