Macaroni in a butternut squash sauce perfect for a fall day.

Ingredients

Squash Sauce

  • 1/3 cup onion powder
  • 4 tsp garlic powder
  • 1/4 cup salt
  • 2 tsp black pepper
  • 1 cup apple cider vinegar
  • 2 tbsp paprika
  • 1/4 cup sage
  • 2 tsp turmeric
  • 2 tsp nutmeg
  • 10 cup oat milk
  • 4 cup nutritional yeast

Pasta

  • 4.5 kg pasta
  • 6 tbsp water

Instructions

Squash Sauce

  1. wash the squash, remove the seeds, keep the skin on, and cut into 1-2 inch chunks
  2. place all sauce ingredients in a blender or food processor and blend until smooth

Pasta

  1. cook pasta according to package instructions

Serve

  1. add sauce to the pasta and enjoy!
