Ginger Molasses Cookies

Chew, soft, and flavourful molasses cookies with the perfect amount of ginger.

Ingredients

Wet Ingredients

  • 720 g oil
  • 1.1 kg sugar
  • 2 tbsp vanilla extract
  • 1.2 kg molasses
  • 1 cup oat milk

Dry Ingredients

  • 2.2 kg flour
  • 8 tsp baking soda
  • 1/4 cup cinnamon
  • 8 tsp ground ginger
  • 4 tsp cardamom

Sugar Coating

  • 2 cup sugar

Instructions

Dough

  1. preheat oven to 350ºF
  2. mix wet ingredients together in a large bowl
  3. mix dry ingredients together in a separate large bowl. Make sure there are no salt/baking powder/baking soda lumps
  4. pour dry ingredients into wet ingredients. Mix together with a spatula

Bake

  1. scoop out 2oz balls of dough and roll in a sugar coating
  2. place each ball on a baking tray with parchment paper and press down. tomake circles around 2 inches. indiameter. Leave at least 2 inches between cookies
  3. bake 350ºF for 10-12 minutes
